Cooking a Good Everything Else

Thought I'd take El D's advice and create another thread for cooking discussion, as steak is wonderful, but pork, meatballs, chicken, pasta, sausage, greens, and charcuterie deserve love too.

Also an appropriate place to discuss cooking equipment from knives to boards to ranges to sous vide setups, smokers, etc.

I'll get it started with a few pics of some of my current favorite dishes including:

Fennel Braised Baby Back Ribs


These things are amazing, and EASY. Absolutely delicious, easy to make in quantity, and a crowd pleaser for sure. I make em at almost every bbq (though the great thing is that you can do them indoors during the colder months)

Pork, Panchetta, Veal Meatballs


These are not a fan favorite, but only because when I make them, I horde them and eat them for a week straight. They're a bit time consuming, but once you have em, you're set for a few days.

Orecchiette with Fennel Sausage


This is a new favorite dish and I don't really even know where to begin describing how amazing the texture contrast between the breadcrumbs, semolina pasta, and sausage is, or how this dish singlehandedly sold me on the value of fennel pollen. It takes some time, but the steps are pretty simple.

My Masamato Gyuto


I love this knife, and while it's a bit pricy for your average housewife, it's a steal by japanese steel standards, and you'll walk away with a whole new definition of sharp from the moment you remove it from the box.

Just some random stuff to get this thread started. I know others have been chastised for posting pork in the steak thread, and the BBQ thread doesn't get much love, so get in here and post about food!!!

Made some Pok Pok Wings from Andy Richter. Very solid. Basically fish sauce and sugar with a little garlic. A keeper.

me too, not a fan of pecorino

It really depends. in most dishes i prefer parmesan over pecorino romano that being said some just need that special bite.

If you can get your hands on a nice piece of pecorino toscano. Now that stuff is amazing!


Tried the Kenji garlic noodles and it was completely overpowered by garlic. We are the kind of people who usually double the garlic in every recipe too, wife is italian and we eat garlic pastas multiple times per week.. Basically LOLd at 20 cloves and instead put 13-14 and it was still ridiculous. Off-putting to the point where we wouldn't even want to try it again with 7-8 cloves. We also love cacio de pepe and often cook with the Asian ingredients he put in there. Is this a joke recipe or something like when people tell you to put dish soap in your laundry machine or microwave your wet cell phone? I don't get it.

I made the Kenji noodles with 20 cloves of garlic a couple weeks ago and loved it. I will admit it is a TON of garlic. I walked to the store after a bit and came back home and man, walking in the house it hits you right in the face.

I didn't feel like buying fish and oyster sauce so just used equal parts soy and worcestershire.

Again, I loved it but I can easily see how someone wouldn't. 20 cloves, lol.

I just made this for the first time. I followed the recipe pretty closely except I only used 8-10 cloves, because that's all the fresh garlic we had at the moment. It turned out great. My wife and I both loved it.

My next undertaking is going to be Pok Pok Wings, basically glazed sweet/garlic/fish sauce wings.

Chrissy Teigen was heading to Portland the other day and asked for recs and 50% were Pok Pok Wings. Andy Ricker is a mad genius so that is the next plan. These sound legit incredible.

He's been posting some old videos on his stories of doing the renovation at Pok Pok before they opened. It was incredibly trashed.

On a college visit drive, I legit gave my son an hour long lecture/discussion on how time preferences are the single most valuable lens in which to understand the world. He’s the same one I’ve been coaching my steak methods with.


Man I am just botching everything lately, it's LOW time preference.

And I agree Bigdaddy, it is absolutely one of the most important lessons you can give to a young person. It can and should change one's entire mindset and worldview, but very few are exposed to the concept, let alone taught it.

FWIW I knew what you meant by “long”

My son got irritated at me the other day when I described his daily soda habit as classic high time preference behavior.

“Hard work may pay off in the end, but laziness always pays off now!”


When my son was old enough to leave the house by himself, I had one simple piece of advice. Every time I told him, "Don't be a douchebag."

When I was hugging him in his dorm room after getting him settled in to start college, he whispered in my ear, "I know Dad, don't be a douchebag." I cried as I left.

He's 24 now, is a mechanical engineer and knocks down 100K+/year. Saw him last week and we went out for sushi. When we were saying our goodbyes in the parking lot, at the end of our pleasantries, in unison we said "And don't be a douchebag."

It's weird what ends up being bonding moments, yet in and of itself is good life advice. 😃
